Wake Tech Nutrition Students Talk With “Meal Makeover Moms”

RALEIGH, N.C. (December 13, 2011) - Students in a nutrition class at Wake Tech Community College had a special "virtual" visit today: The "Meal Makeover Moms," nationally-known dietitians Janice Bissex and Liz Weiss, visited the class via Skype to talk with students about healthier eating. The moms are the authors of No Whine with Dinner and The Mom's Guide to Meal Makeovers, and they produce a cooking blog and podcast, all aimed at educating consumers about how to make recipes and meals more nutritious.
The visit was the result of a student assignment in the Wake Tech Nutrition (BIO 155) class. Students were asked to take a favorite calorie-laden recipe and use what they'd learned in the class to make it healthier - and to submit the original version to nutrition experts to see how it should be modified. Many turned to the Meal Makeover Moms, overwhelming Bissex and Weiss with inquiries.
"In the span of a couple of days, we were bombarded with about 30 requests from Wake Tech students asking for recipe makeovers," said Bissex. "We couldn't handle all of them in a timely manner, so we contacted the instructor and offered to use Skype to talk with the students and answer their questions."
A few of the students also prepared their dishes - both versions - and the class conducted a taste test. The improved recipes passed muster, according to instructor Tonya Peele: "They were really good!" That's what Bissex and Weiss love to hear. "We're on a mission to help families eat a healthier diet,"
Bissex says. "It's all about adding healthier ingredients to make recipes more nutritious and tasty!" Bissex and Weiss began "Meal Makeover Moms" in 2001. They are based in Boston, MA.
